Hired as a Director of Food and Beverage Services at the Stardust Hotel & Casino to close the property and get it ready for the development of the Echelon Project. Upon, closure, I was moved into a corporate position, eventually assisting 22 properties across the country. I assisted the property General Managers/Corporate Human Resources on locating and hiring talent, writing policies and procedures and negotiations. I worked very closely with the Corporate Construction on all (new construction and remodel projects). I also worked with Corporate Purchasing on sourcing products and contracts. I pulled all permits and licences for the Nevada Properties. I handled all Southern Nevada Health Department related business for the local Boyd properties. I worked closely with all F&B Directors and Executive chefs on menu designed and all other related issues

Caesars Entertainment bought the Horseshoe Hotel/Casino in order to acquire the World Series of Poker with the intention of selling the property. I was hired as the Hotel and F&B Director, on a one year contract until the property was sold. I assisted in the cleaning up, repair, staffing and aligning the hotel, restaurants and bars on the property for grand opening and a future sale.

We Catered many of the local hotel casino picnics, off premise VIP casino events, Wet N Wild Events, Bonnie Springs outdoor theater events. We rented major off premise propane fired restaurant equipment, refrigeration equipment, made box lunches for the Sands Expo, the Thomas and Mack and convention center when they did not have the staff, they were short of time or volume was too large. We owned Cafe America in the old Paradise Spa on Las Vegas Blvd South at the same time

Hired by Tony Marnell and Jay Barrett a VP, in order to Oversee F&B services, Maintenance and Facilities, Catering/Convention Services and new Construction. We added 100,000 sq. ft. of banquet space, a Noodle restaurant and re-modeled the Beach Cafe to the San Paulo Cafe and pool bar.

I was one of five individuals of JMJ INC. brought in to take the old, tired, worn out Aladdin Hotel & Casino out of bankruptcy. Originally, I was the Vice President of Food and Beverage Services when our company was formed. All five of our team had their expertise in a certain segment of the hotel, casino and gaming industry. Upon the accidental death of our CEO and General Manager in 1993, I accepted the position of General Manager.

While at the Stardust (over a two year period) we closed 4 existing restaurants and opened six new concepts and 35,000 sq. ft. of state of the art banquet facility. we re-modeled our showroom, casino and added a new hotel tower. During a period of approximately eight months, I had the duties of both Director F&B and Executive Chef

We had TK Christie’s Bar and Restaurant (downtown ) in the Valley Bank building, Cohen and Kelly’s restaurant as well as the bars and coffee shop in Vegas World Casino. County and City jail feeding as well as the Mental Health center feeding, The Caterer’s Deli, local movies and Nevada Forestry Service and local Catering.

Re-directed a broken food and beverage department. Opened our own bakery, butcher shop, and made all fresh soups, sauces, gravies and entrees. Worked with the Marketing department to attain business form desired local zip codes, tourists and industry employees to our big loser into a consistent winner.

We serviced the television, Motion Picture & Division of Forestry Service Industries. We fed the stars and crews on numerous television programs and mini series as well as major motion pictures all over the country. A partial list (Air Wolf, Winds of War, War and Remembrance, Best Little Whorehouse in Texas, Smokey and the Bandit, Swing Shift, Sting and more). We also fed firefighters on some of the largest fires in California, Arizona, Nevada, Utah, Oregon, Idaho and Washington, three meals a day, seven days a week: Sometimes tens of thusands of meals a day in extremely adverse conditions.
